Okay, here are the ingredients:
Muffin Mixture:
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/2 c. shortening (we use butter instead)
1 c. sugar
1 egg
1/2 c. milk
1 1/2 c. fresh or frozen blueberries (ours are always frozen)
2 tsp. baking powder
1/2 tsp. salt
1/2 c. shortening (we use butter instead)
1 c. sugar
1 egg
1/2 c. milk
1 1/2 c. fresh or frozen blueberries (ours are always frozen)
Crumb Topping:
1/3 c. butter
1/2 c. sugar
3/4 c. flour
1/2 c. sugar
3/4 c. flour
Okay, start by preheating your oven to 400 degrees. :) After that you will want to grease your muffin pan (or line it with paper liners if you have them). We always just take a stick of butter and rub it in each muffin cup and we never have a problem with our muffins sticking (it also adds more flavor to the muffins).
Now you need to cream (cream is just a fancy word for mix) the butter and sugar from the muffin mixture. You should definitely use some sort of mixer (a hand mixer or manual mixer) to do this. You just can't get it mixed enough by hand. :) I have both kinds of mixers, but I prefer my manual mixer over anything... :) LOL!! When I was creaming the sugar and butter I cut the butter into little blobs instead of just throwing the whole stick in, because when you do that it mixes easier. :)
I started the speed very low and then increased it to about 5 (or medium) then I let it mix for about 2 minutes but it could vary.....just until it looks like this.
It should look kinda crumbly like that. :) After you are done creaming the butter and sugar the next part is easier.....just add one egg and mix again. I let my mixer mix for maybe a minute on low. :)
Now the next part is a little more complicated. :) You are going to want to put half the flour (1 cup) then mix it for about 1 minute, then you should put half the milk and let it mix, after that put the rest of the flour (the other 1 cup) then let that mix in, and then add the rest of the milk and let that mix in. Basically you are just alternating the two ingredients. Don't just add the 2 cups of flour then the half cup of milk because this will mess up the recipe. :) After you are done with that, add the baking powder and salt.
Your mixture should be pretty thick and kinda gooey like this.
I know, it's thick. Trust me the muffins turn out amazing because of the thickness. :) Now you need to add the blueberries of course!! :) Gently fold them into the mixture.
Okay, now you need to make the crumb topping. This is like the easiest topping in the entire world. Add the flour and sugar together first and mix them up. Then take the butter and cut it into tiny little blobs and throw it into the mixture. You may have to cut the butter with a knife a little after you put it into the mixture, but remember that it is supposed to be lumpy.....this is what gives the muffins their amazing buttery flavor. :)
Now transfer the muffin mixture to the greased muffin tins. Put about one tablespoon of crumb topping over the batter. :) It should look something like this.
I know, it looks kinda weird......don't worry!! They turn out amazing after they are done cooking!! :)
Cook for 20-25 minutes. :)
Here's what they should look like when they are done.
Carefully transfer them to a plate and enjoy with butter (hahaha!! More butter!! :D). :)
I had mine today with eggs (Yes, I put tons of salt and pepper on my eggs...it's one of my many quirks.) These muffins are soooooooo good!! If you make these for your family they will love you forever!! :D
Hope you enjoy!! Stay tuned!! :)
